Happy St. Patrick’s Day!!! What’s for dinner?

As an actual Irish person, I\’m pretty sure it would be against the by laws if I didn\’t have a recipe for corned beef & cabbage…

So, here you go.   Add different things if you want,  make it YOURS!  I honestly never understood when someone says they don\’t know how to cook.   Take things you like, put them together, heat it up  It\’s that simple. 🙂 

  • 3 pounds corned beef
  • 1 Large white onion, sliced ( personally i just quarter it.)
  • 1 1/2 cups water
  • 1 14-oz. can chicken broth, or bone broth. You can also use beef froth, or veggie broth… It\’s up to you! 
  • 4 carrots, chopped
  • 1 head cabbage, broken apart- not cut.  jut rip with your hands.
  • several shots of whiskey.

Break out the crock pot – and place your onion pieces on the bottom.   Rinse your corned beef and cut off the excess fat. Take a shot of your nearest whiskey.

Place the corned beef on top of the onion, then pour your water and broth on top. Take another shot of whiskey.

Take your cabbage pieces and place on top, covering the beef. You can add a bit of pepper, or other spices if you\’d like, but sparingly.   Toss in a shot or 2 of whiskey.

Place your crockpot on low and cook until tender. Generally about 8 hours.    About 6 hours in, add your carrot slices.  You can add them from the beginning, but it really makes it too sweet for my taste if i add them too early. 

drink some more whiskey while you wait. 😉 It makes the time go faster.
